Day 1: QUITO – ILUMÁN – OTAVALO: FLAVORS & WAVES OF THE ANDES

Prepare and taste traditional dishes including chochos salad, fritada (slow-cooked pork), potato tortillas, quinoa with vegetables, and the iconic helado de paila. Begin in Ilumán, a community renowned for its traditional healers, where you’ll witness a demonstration of an ancestral Andean limpia (energy cleansing ritual). Learn about the deep spiritual connection to Pachamama (Mother Earth) and the Indigenous worldview that honors nature and balance. Continue to the iconic Plaza de los Ponchos, one of Latin America’s most important indigenous markets.
